Zucchini Boats

1 large zucchini cut lengthwise

1/2 pound ground beef, sausage, or venison

1 /2 cup bread crumbs, plain or seasoned

1 small chopped onion

1 small chopped green pepper

1 egg

1 small can whole corn or green beans, drained

Mozzarella cheese

Salt and pepper to taste

Discard seeds from zucchini; microwave until pulp is soft. Scoop out pulp, leaving 1/4-inch sides on ''boat.'' Save pulp. Brown ground meat with onions and green pepper; drain off grease. Mix zucchini pulp with browned meat and vegetables; add corn or beans, egg and bread crumbs. More bread crumbs may be added to give mixture consistency of filling, if needed. Fill boats with mixture. Top with slices of fresh tomatoes and sprinkle with mozzarella cheese. Place in greased casserole dish and bake for 45 minutes at 350 degrees Fahrenheit.
