Zucchini Bread

2 cups sugar

3 eggs

1/2 cup oil or olive oil

2 cups zucchini, grated

1 tablespoon baking powder

3 cups flour

1 teaspoon baking soda

1 cup drained, crushed pineapple

2 teaspoons vanilla extract

3 teaspoons cinnamon

Mix first four ingredients in a large bowl. In a separate bowl combine flour, baking powder and baking soda. Add 1/2 dry mixutre to first mixture. Add pineapple, vanilla and cinnamon.

Add the rest of the dry mixture. Blend well. Bake at 325 degrees Fahrenheit for 40 to 60 minutes.

Yields 2 large or 4 small loaves.
