Sponge Bread Dough

This recipe takes approximately 7 cups of flour.

Mix for sponge:

1 1/2 cups warm water

2 tablespoons sugar

2 packages dry yeast

Mix together in a bowl with 1 1/2 cups of flour until smooth. Cover and let rise until doubled, approximately 30 minutes.

Heat 1 cup of milk (scald)

Add to milk:

2 tablespoons sugar, 1 tablespoon salt

3 tablespoons melted butter or margarine

When sponge is ready, mix down, add cooled milk mixture and flour, enough to form soft dough. Knead until smooth, 8 to 10 minutes. Place in a large greased bowl, cover and let rise until doubled, approximately 30 minutes.

Punch down, shape and put in 2 or 3 bread pans, let rise 30 minutes.

Bake 400 degrees Fahrenheit, 30 minutes, remove from pans and cool
