Vegan Bean Tacos

Two 15-ounce cans garbanzo beans, drained and mashed

1 package McCormick's original taco seasoning

1/2 cup water

1 green pepper, diced small

1 red onion, diced small

1 package Mission flour tortillas

shredded lettuce

taco sauce

Place mashed garbanzo beans in medium skillet, sprinkle with taco seasoning packet - then stir in 1/2 cup water (less or more for desired consistency) and mix thoroughly. Simmer on low heat 15 minutes or until bean mixture is hot and thickened.

Wrap tortillas in foil and place in 325 degree Fahrenheit oven until warm.

Spoon bean mixture in center of warm tortillas, top with lettuce, green peppers, onions and taco sauce.

Great side dishes are Spanish rice, homemade guacamole or fresh avocados with tortilla chips and Mexican corn.
